Shrikhand is a Indian sweet,a most popular dessert which is delicious and creamy to taste. It is such an sinful dessert to indulge when we are carving for sweet badly is it. For this weeks Bm theme I had taken Indian desserts , which thinking about some Indian desserts every sweet is actually had as dessert after meal but to be specific I wanted to shared some Indian chilled desserts. So not to forget our traditional sweets served chilled in which shrikhand can’t be forgotten. I never forget to enjoy these sinful treat whenever I encounter them sold in matkas or terracotta bowls. Usually shrikhand are made with hung curd, but it takes over night to make the hung curd and we have to wait till all the water in the curd drains off and thick curd is got. I was carving for shrikhand and cudn’t wait for a day to make them so made this quick version . This quick version of shrikhand will surprise you as tastes just similar and yumm. - Soak the saffron strands till needed.
- Take a muslin cloth keep it on a strainer put the curd .
- Take the sides of the cloth together and press it gently till all the water from the curd is drained off. traditionally it is left overnight hung on a pipe so that all the drops of water gets removed but as it is a quick version remove as much of water from the curd by pressing it.
- In a mixer take out the cold cream cheese, add the thick curd and give it 2-3 pulse so that they combine well and form a thick mixture.
- Add sugar and pulse is just once to get it mixed.
- Add the saffron strand soaked in milk. Refrigerate for 2-3 hours .
- Garnish with pistachios and serve chilled.
