Checkerboard cookie were in my to do list for long and after making these beauty I was thinking why didn’t I make them early they taste as gud as they look. I know am too behind again for the marathon but this time it is not the baking I had already completed my baking part still was unable to post it on time becoz so many things are happening around couldn’t sit near the laptop for long. I feel amazed how these Indian bloggers have so much patience bcoz the internet is so slow and also to cook something for blog means you have to think ahead of time and then do the grocery shopping , I miss US kitchen as I used to have each and every thing loaded in my pantry always . Now coming to the recipe this very simple one again the technique of making these cookies need some patience and trust me you will make them again and again. I had planned to make checkerboard cake too but had to skip there was no time .. I just loved the way they turned out and planning to make them again when I get back.

Ingredients
All purpose flour – 1 3/4 cup
Cocoa pd – 3 tsp
Sugar – 3/4 cup
Vanilla essence – 1/2 tsp
Butter – 1 stick
Salt – 1/4 tsp
Milk – 1 -2 tbsp.
Water to brush
Method
- Sieve All purpose flour and keep it ready.
- In another bowl cream room temperature butter and sugar it combined.
- Add vanilla essence and salt and mix.
- Add the all purpose flour and mix them well , add milk little by little to combine them to a smooth dough.
- Divide the dough to 2 equal parts , add cocoa pd in one portion and mix them well till the cocoa is incorporated in the dough add little milk if the dough is too dry.
- Roll the white dough into a rectangle shape about 4 inch thick brush , do the same with the chocolate dough .. Cut the uneven edges .
- Brush some water in the rolled white dough place the rolled chocolate dough and press gently.
- Cover the dough in cling wrap and refrigerate for 1/2 hour.
- The cut strips in equal size , now take 2 strips one strip will have white and brown part, stick two strip accordingly..Brush water to stick them .
- Do the same for 3 more pairs of strips the stick the 3 together by brushing water . Press gently so that the strips stick to each other.
- Cover it with cling wrap and and refrigerate for 1/2 hour or 1.
- Pre heat the oven at 350 F . Line parchment paper on a cookie sheet.
- Slice the cookie about 1/4 inch thick and place each slice on the cookie sheet leaving some gap between each cookie.
- Bake the cookies at 350 F for 10 – 15 mins till you see some light brown corners.
- Cool on a wire rack and store it in a air tight container.
So perfectly baked… I am loving the delicious cookie…
