Diwali is right ahead and I am listing out the dos for the festival and came up with this wonderful idea of making a Indianized cupcake to suit the event. We love carrot halwa made at home But cupcake in desi flavours was what I was aiming to make. Trust me each bit of this cupcake will taste like a carrot halwa in different form. Though H felt the sugar level can be increased slightly but the cupcake tasted so desi , I felt it was perfect not very sweet and super spongy to indulge for the coming occasion . Diwali bring out lots of memories from my childhood and How we used to celebrate the colorful light festival am so excited for the D day and have some plans to do . Before the celebration begins have listed a lot of recipes to do for this diwali so that I can share them with my neighbors and friends. Ok now coming to the cupcakes these are purely desi flavored cupcakes which doesn’t need much preparation if the hero of the cupcake which is “carrot halwa” is already to make them. I know carrot halwa can be enjoyed as is it doesn’t need any make over but this a fusion way to make them more interesting. I haven’t posted the carrot halwa recipe yet But will post it soon in separate. To depict the Diwali season I have make a diya shape with some icing sugar.. Ingredients
Carrot Halwa – 1 cup ( Made with Carrot, sugar, Milk and Ghee)
Sugar – 1/4 cup ( adjust to taste)
Baking Pd – 1 tsp
Baking soda – 1/2 tsp
Apple cider – 1 tbsp
Milk if needed
Method
- Pre heat the oven at 350 F and sieve all purpose flour , baking pd and baking soda.
- Mix carrot halwa on the sieved mixture.
- Add apple cider and Fold it in the batter.
- Add Milk if the batter is dry .
- Line the cupcake pan with cupcake liner.
- Spoon the batter in the cupcake liner , fill 3/4 th part of the liner.
- Bake them at 350 F for 15-20 mins or till a tooth pick inserted comes out clean.
- Cool them on a wire rack.
- You can frost them with some cream cheese frosting or just dust some icing sugar and enjoy.
