Foxtail millet/ Thinai is very popular in east asia and especially in south India people have started using millets more and are spreading awareness on it about how healthy they are. There are many kinds of millets and thinai is a one such millet which is yellow in color and a small grain. These grains can be used in place of rice to make it more healthy as Rice might not suitable to everyone.Mainly for diabetics it is highly recommended to substitute millets instead of rice. Here in US we get only 2 varieties of millets Kodo and thinai easily, I have already made thinai mavvu dhokla few days back and for my second recipe from millets here is a comfort food we all love Sambhar sadam in a healthy way. I made this thinai sambhar bhath for H’s Lunch and he was surprised that it was not made with rice, healthy and hearty way to enjoy the aromatic rice. Coming to the recipe this a simple version which can be made in jiffy , when your are in a hurry to pack lunch box but they same time you feel very happy about its nutritive content you have put in. - Chop the vegetables and keep them ready.
- Wash and soak thinai and toor dal in one bowl for 10-15 mins.
- In a pressure cooker add oil , heat them add mustard seeds, cumin seeds.
- After the they splutter add curry leaves, onion.
- Saute the onions till translucent.
- Add tomatoes and saute them till they turn mushy.
- Add red chilli pd, cumin pd, coriander pd, sambhar pd .
- Saute them and add all the chopped vegetables.salt.
- Drain the water from soaked thinai and toor dal .
- Mix them all well , add 4-5 cups of water.
- Cover the pressure cooker and cook them for 3 whistles.
- After the pressure subsides remove the steaming hot thinai sambhar bhath in a serving plate.
- Garnish with coriander leaves and cashews and serve them with any chips / papads.
