Karthigai deepam is a very popular another lights festival after diwali which is celebrated on full moon day they call it karthigai masam that falls in nov or dec month. As for diwali even karthikai festival is celebrated the same way lights . Agal vilaku / lamps are lit in rows in every home.As I was born in chennai I used to see kids carrying lamps around the community and it is said that this festival is also celebrated for brother sister bonding. Sisters pray for prosperity of their brothers and light lamp on this occasion. For this special occasion people make appam, adhirasam, payasam, vadai, and pori urundai to celebrate. Pori urundai is one of my childhood fav , this is especially made for karthikai deepam. I love these light weight ladoos made of puffed rice with not many ingredients used it is actually simple to make and even though the size of the urundai may be large you can have 2 -3 at time it is that light sweet. There is no sugar used and jaggery makes this urundai more healthy but people do make them with sugar too.I remember these were hung the tea kadai in large packs and we just enjoy them once in while .Lets move on to the simple recipe to make this karthikai deepam more interesting.

- In a large sauce pan put jaggery and water, boil them till the jaggery dissolves.
- Strain the jaggery water using a metal strainer to remove any impurities.
- Add cardamom pd to the jaggery and boil them again.
- Keep a bowl of water ready , boil syrup in low flame till soft ball consistency .
- To check when the syrup is done , pour a little amount of syrup in the bowl of water.
- If the syrup doesn’t dissolves and hold a shape if you try to form a ball then it is a perfect time to add the puffed rice.
- Lower the flame and add the puffed rice . Mix the puffed rice well in the jaggery syrup it it coats well.
- Turn of the flame and grease your hands with ghee.
- The mixture should not be sticky if you feel the syrup can more for the puffed rice then you can add extra puffed rice if needed.
- Pick a portion of the pori mixture, Use both the hands to roll the balls. Press them tight and make equal sized balls.
- You can even add extra ingredients like Dalia,coconut pieces and ginger pd ( sukku podi ) too.
- You have to be quick while making balls , as it might harden as time goes.
- If the syrup doesn’t attain the soft ball consistency the mixture will not form ball and wouldn’t stick.
