Kothu Parotta is one of the famous tamil nadu street food , which is make with some scrambled parotta , chalna, some masala and the mince them well with dosa ladle , The sound of mincing them is like a music to my years . Unfortunately as they add egg to the store bought parotta I have never tasted one at street shops but I usually make them at home and we love it a lot. Kothu poori is one recipe which I make often when I have leftover poori and I also do the same for Chapathi. It is definitely not the same aas the traditional kothu parotta but it tastes similar. I love to use up the leftover’s and try something new with them always and this is one recipe makes me to make the poori knowingly extra so that I can make this scrumptious dish for snack, It can be make for breakfast / dinner even. Lets move on to the recipe..

Ingredients
Leftover Poori – 4 -5 no
Onion – 1/4 cup ( chopped)
Tomato – 1 no ( chopped)
Ginger garlic paste – 1/2 tsp
Red chilli pd – 1/2 tsp
Turmeric pd – 1/4 tsp
Cumin pd – 1/2 tsp
Green chillies – 2 ( slit)
Lemon juice – 1 tsp
Coriander leaves – 2 tbsp ( chopped)
Oil – 2 tsp
Method
- Cut the poori’s in strips and keep them ready.
- In a kadai heat oil, add the onion and saute them till translucent.
- Add ginger garlic paste , green chillies and saute them for while.
- Add the tomato and cook them till mushy.
- Add capsicum and saute them, add red chilli pd , turmeric pd , cumin pd and mix them well.
- Sprinkle some water if needed. Add the leftover poori and mix them well.
- Let the simmer for a while, add lemon juice in the end .
- Garnish them with chopped coriander and serve the hot.
Tips
- You can add any veggies of your choice , just you need to saute them till they are cooked and the add all the masalas
