I remember how we used to enjoy hot paniyaram in Hot chips neelangarai.. Used hear the sizzling sound of cooking paniyaram and loved those hot paniyarams a lot .. Still remember the old days how me and TH used to hangout in the weekends roaming around the ECR road , just feeling nostalgic when I speak about paniyarams as most of the time we used have them with some interesting talking done in between 😉 .. By the way coming to paniyaram I am a great lover of paniyarams i make them often with idli batter but thought of giving it a healthy twist and used quinoa in the recipe . We love having them in the evening with chutney and sambhar hope you will also like them..

Ingredients
Idli Rice – 2 cups
Quinoa – 2 cups
Urad dal – 1 cup
Water as Needed
Salt as need
For Paniyaram
Batter – 4 cups
Onion – 1/4 cup ( chopped)
Green chillies – 2-3 ( chopped)
Urad dal – 1 tbsp
Curry leaves – 1 sprig
Mustard seeds – 1 tsp
Oil – 1 tbsp
Oil to fry the paniyarams
Method
- Wash and soak rice and quinoa in bowl, in a separate bowl wash and soak urad dal with fenugreek seeds
- Drain the water from rice and quinoa and grind them with little water to make a smooth batter.
- Transefer the batter in a bowl.
- Then grind urad dal with water as required to a smooth batter.
- Use water as required to make a flowing batter but not too thin.
- Now Mix both rice + quinoa and urad dal batter. Mix them well.
- Add salt to taste and mix the batter well with a ladle.
- Cover the bowl and keep them over night for fermentation.Take a large bowl so that when the batter ferments you have some space for it to rise else it will over flow.
- Next day take some batter as required in bowl.
- Heat oil in a pan add mustard seeds , after they splutter add urad dal.
- Add curry leaves , green chillies and onions.
- Saute them till the onions turn translucent.
- Add this sauted mixture in the batter and mix them well.
- Add little salt if needed ( remeber you have already added salt in batter).
- Heat a paniyaram pan , add oil in each hole and pour some batter in to the paniyaram.
- Cook them till they turn light brown from one side , then flip each paniyaram using a skewer and cook them the other side. Add oil as needed.
- After they turn light brown from both sides , transfer them to a plate .
- Serve them Hot with chutney and sambhar.
Tips
- You can also add grated carrot and any other veggie if you like.
