Rava dosa is an popular south indian crepe made with semolina , rice flour and maida , these crepes can be prepared instantly with out any grinding or soaking. It is one quick dosa varity which taste delicious with chutney and sambhar.As you all be knowing I have mentioned in many of my post that my daughter is a big dosa fan and which ever restaurant we go she wants just dosa to enjoy. I made this dosa specially for her and she enjoyed it a lot.After rava idli this is one recipe I make often whenever my family needs dosa and I don’t have batter ready . These dosa has a texture like a honey comb like or It can be said as netted holes in them only then they are perfect. For this dosa batter is thinner than the usual dosa and the pouring is done in circular motion instead of pouring it in the middle and rotating the batter to make a circle. The batter should be thin only them the texture will attained. It is really easy to make . yes the technique needs little practice but it is not a rocket science.. Ingredients
Rice flour – 1/2 cup
Maida/ all purpose flour – 2 tbsp
Onion – 4 tbsp ( finely chopped)
Green chillies – 2 nos
Ginger – 1/2 inch ( chopped finely)
Curry leaves – 4-5no ( chopped)
Black pepper – 1/4 tsp
Cumin seeds – 1/4 tsp
Ghee/ oil as needed
Salt as needed
Butter milk or Water – 2 – 2 1/2 cups ( i used butter milk approx 5 tbsp of curd churned in 2 cups of the water)

Method
- Take a bowl and mix unroasted rava,rice flour, maida, green chillies, onion, curry leaves, ginger, cumin seeds,black pepper, Butter milk/water and mix them well.
- The consistency should be runny and thin .. Give the batter a standing time of 10 mins and then you can start making the dosa.
- Heat a tawa or pan ( nonstick is better) well.. Once the tawa is hot pour in a ladle of batter in circular motion starting from the edge to the center. You can’t pour the batter and rotate it like a usual dosa, rava dosa are mean’t to pour the way as mentioned to get the tiny little holes in them.
- Drizzle some oil or ghee to help them cook well and roast them in simmer.
- After the bottom part cooks well and turns to light golden brown flip and cook the other side of the dosa for few minutes.
- Do the same for the rest of the rava dosa batter.
- Serve this hot with any chutney and sambhar.
